The combined multi-function machine, composed by 2 split and independent tanks. Each tank is provided with compressor and Inverter. The upper tank can be used as boiler, pasteuriser, ageing vat, pasto-cooker or for the preparation of Pate à choux, Jellies, Jams, Marmalades, Yoghurt, “Panna cotta”, Mousse, Marshmallows, Nappage, Fresh cheese, “Béchamel sauce”, Rice for pastry, “Risotto”, Mush, Sauces, “Ragu”, perfect for making batter! It can contain 15 Litres of mix. The lower tank is an horizontal batch-freezer with regulation “AD HOC” for the correct ice-cream consistency. The algorithm processed to control the agitator’s torque in Newtons per meter allows to obtain creamy, compact and dry ice-creams, and to regulate the gas supply as soon as the preset consistency has been reached.
The operator can decide to: pasteurise and mature the mix in the upper tank before moving it into the lower batch-freezer; heat up the mix in the upper tank and move it into the lower batch-freezer (thermal shock). The two tanks can work at the same time. While in the upper tank you pasteurise or heat up, in the lower one you can make ice-creams or sorbets. The moving of the mix from the upper tank to the lower one is possible thanks to an external channel. This way it is possible to fill the upper tank with the quantity of mix you need to batch in the lower one stabilizing each recipe one at a time (to make ice-creams using the thermal shock); or fill the upper tank with 15 Litres of mix to be pasteurised and matured (to make ice-creams using the traditional cycles). Thanks to the external slide it is possible to remove the mix prepared in the upper tank without passing compulsorily through the lower tank.
Vertical and round tank that allows you to prepare condensed mixes and save immediately the 30% of power supply.The ice-cream base is not stressed during the preservation by any fast stirrer. Inside the tank there is just one agitator that move the mix for the whole tank and turn slowly not to make the product skim. Transparent lid allows you to check the state of the mix throughout the whole production cycle. Double lid to insert the ingredients while the agitator is moving. Front control panel with favourite icons for a fast selection of mixing, pasteurising, custard cream, cooling and recipes’ programs. Temperature regulation with PID (proportional integral derivative). Dry heating with electronic card for a precision adjustment of the temperature. Inverter with acceleration ramp for the agitator to protect the transmission from any mechanical stress. Chain transmission with gear boxes lubricated for life to reduce vibrations and swingings and to avoid slipping, adjusting and replacing of the drive belts. It allows you to choose the ideal cycle according to time. 2 batch-freezing/preserving programs with temperature control. It allows you to choose the ideal temperature. 40 free programs. For the customisation of the recipes and the thermal treatment of the mixes up to 115°C.1 chain program. Thanks to this important innovation it is possible to combine up to 5 different programs. Each free program can work easily and automatically with preset parameters. The operator can change the cycles in progress dynamically by changing the stirrer speed, the heating and freezing temperature and the cooking time. He can save the new parameters for the next cycles.The pasteurisation programs are made for: the favourite heating temperatures of the mix up to 85°C (high pasteurisation) or 65°C (low pasteurisation), the possible pause time and the following cooling down to 4°C. An acoustic signal informs you about the end of the whole cycle. The ageing/preservation cycle starts now, it keeps the constant temperature of the mix at 4°C. The mixer can be used continuously or intermittently. The cycle works completely automatically even in case of black-out.
